The production process of wheat flour mill and maize flour mill is roughly the same in terms of front cleaning. They all need to use equipment such as flat rotary screens, high efficiency vibration sifter, and gravity grading destoner machines. However, the downstream production processes have their own characteristics.
Wheat production is relatively complex. It typically involves a meticulous refining and milling process. The milling process consists of bran, residuum, endosperm, and tail grinding,as well as a purifier system. It utilizes gentle grinding forces to maintain the integrity of the bran while finely segregating the components, treating different materials differently to achieve ideal separation of bran and endosperm, thus enhancing flour extraction rates and product quality.
A typical wheat flour production involves around 4-5 passes for bran milling (coarse and fine milling), 7-10 passes for endosperm milling (which can be increased with additional roller passes), and 1-3 passes for residuum milling. The main task of the bran system is to crush wheat grains, extract a certain amount of coarse grains, coarse flour, and flour from the grains, and clean the bran thoroughly. The endosperm system's task is to take the bran system and the bran separated by the cleaning machine (referred to as wheat middlings), remove the embryo adhering to the bran by a lighter scraping action, extract good quality embryo particles (wheat germ), and at the same time, mill out some good quality flour. The reduction system's task is to grind the embryo coarse grains and coarse flour extracted by the bran, middlings, and purifier systems into flour with a certain fineness and good quality, and separate out lower quality fine bran particles. The tail system specifically handles the bran particles with embryos extracted from various reduction processes. By scraping off the remaining flour particles from the bran, the purity of the reduction system material is improved. The purifier system's task is to classify the wheat middlings, wheat germ, and coarse flour extracted by the bran, middlings, and other systems into bran, wheat middlings, and pure wheat germ according to quality. Through such processes, high-quality flour is obtained.
The general processing process for maize flour includes maize cleaning, conditioning, degerminating, milling, sifting and packaging.Based on market demand, clients can choose to directly mill the maize after
degermination, or grind it step by step to produce the desired market maize products.
Currently, there is a new trend in maize production which involves processing maize flakes. The process includes raw maize cleaning, conditioning, degermination, milling, extrusion cooking, cooling, flaking, drying, cooling, and final packaging.
This is a new development trend. The maize flake raw material must use purely maize endospern after remove the germ and bran. The maize is crushed into fine particles of around 60 mesh size, and the powder enters a conditioner and is pre-mixed with steam. It then enters an extruder for cooking and pellet forming, achieving consistently high degree of gelatinization, uniform particle size, attractive appearance. After cooling, the particles enter a flaking machine. The flaking machine uses water cooling to maintain a constant temperature, effectively avoiding the sticking effect when the particles enter the flaking machine. This ensures more uniform flakes with consistent thickness. The equipment utilizes hydraulic controls to regulate the thickness of the final product, ensuring simple operation and consistent control precision. After flaking, the flakes are processed in a high-temperature air flow puffing oven. Within approximately 2 minutes in a 300-320 degree high-temperature airflow oven, the flakes fully expand, with evenly distributed bubbles on the surface and an appealing color, making them a popular choice for breakfast.
This is the difference between a wheat flour factory and a maize flour factory.
